Sticky Pork & Noodle Stir-Fry

Serves 4

Only got 30 minutes to prepare an amazingly tasty meal? Well this is it. A quick and easy stir-fry that works equally well with chicken, beef or pork. For this recipe I will be using pork neck. which is a well marbled and very tasty cut of meat.

Ingredients

2 tablespoons of Spicy & Sweet BBQ Spice Blend
1 kg of pork neck, cubed into bite size portions
400 g of egg noodles
2 tablespoons vegetable oil
1 red onion, sliced
1 spring onion, sliced
1 cup red bell pepper, diced
1 cup broccoli, chopped
1 ½ tablespoons garlic, crushed
1 tablespoon ginger, grated
½ cup soy sauce
¼ cup sweet Indonesian soy sauce (kecap manis)
30 ml rice vinegar
2 tablespoons brown sugar
2 tablespoons fresh cilantro (coriander leaves), chopped
2 tablespoons sesame seeds
1 lime
salt to taste

Preparation

  1. Take the pork out of the fridge 45 minutes before preparation, so that it can reach room temperature.
  2. Heat oil in a deep pan or wok. Once the oil starts glistening and smoking add the pork and stir occasionally.
  3. When the pork starts browning, add the onion, 1 tablespoon of Spicy & Sweet BBQ Spice Blend, 1 tablespoon sugar as well as the the garlic and ginger.
  4. Stir until the onion is translucent and then pour in the soy sauce and rice vinegar. Once the sauce starts bubbling, add the red bell pepper, spiring onion and broccoli, stir until everything is coated.
  5. Cook until the vegetables are slightly underdone, adding 1 tablespoon Spicy & Sweet BBQ Spice Blend, salt and sugar to taste.
  6. Add 400 g of egg noodles, mix well and cook until done.
  7. Garnish with sesame seeds, the remaining cilantro and a squeeze of lime juice.
