An integral ingredient in Ethiopian cuisine and mostly used in stews called ‘wats’, this spice blend is an unique mix of tangy heat from chili, paprika, cayenne, pepper and ginger, combined with the sweetness of mace, fenugreek, cinnamon, allspice, cloves and cardamom. Added to lentils, mixed with oil and rubbed on meat and chicken before grilling, this spice blend is the fiery taste of Ethiopia. Similar in application to Indian Masala and just as versatile.
